Chanterelle Sauce
Chanterelle sauce is one of the greatest delicacies of the mushroom season! In this version, the sauce gets a new twist from nutmeg. Boiled potatoes are delicious served alongside this warming, spiced sauce. Recipe by Mari Moilanen.

Clean and chop the chanterelles into a few pieces. Small chanterelles can be used whole. Peel and finely chop the yellow onion.

Sauté the chanterelles in a frying pan until all the moisture has evaporated from the mushrooms.

Add the onion and butter to the pan. Sauté for a few minutes. Stir in the flour and cook for another couple of minutes.

Pour the cream into the pan. Stir, and season with salt, nutmeg, and black pepper. Simmer the sauce over low heat for 10 minutes.
